Barszcz Czerwony (Beetroot)

    Christmas borsch with small dumplings - specially prepared red beetroot soup with long ears, which is a traditional Polish soup served during Christmas Eve. Christmas borscht is different from the red borscht prepared during the year. This is a pure borscht post, which is prepared without the use of meat ingredients excluding fish. Beetroot puree is prepared from beef and beetroot decoction mixed with dried mushroom and beetroot. Part of the recipes is prepared immediately with one decoction (vegetables and mushrooms). Beetroot is often prepared even two weeks before Christmas Eve.
