Piernik Staropolski (Ginger Cake)
Gingerbread - hard dark brown cake made of a mixture of wheat and rye flour, milk, eggs, caramelised sugar, honey, heavily spiced with cinnamon, ginger, and sometimes also cloves, cardamom, nutmeg, anise and lavender. Gingerbread usually occur in the form of smaller and larger biscuits, often topped with chocolate, nuts and raisins, and in the middle layered with marmalade, nut mass or marzipan. Big gingerbread blocks are also baked, usually layered with layers of marmalades. After mixing the dough, leave it in a cool place to ferment. In industrial production, the dough can last several weeks, and the Christmas gingerbread dough is recommended to earn a month earlier
