Żurek (sour soup)
Żurek (sour soup, leavened flour soup) - a soup made on the basis of sourdough rye flour with a characteristic sour taste. Specialty of regional Polish, Belarusian, Czech and Slovak cuisine and other northern Slavs. It is sometimes covered with milk or cream (quick soup), or prepared in combination with the decoction of bones and vegetables, with the addition of dried mushrooms. Or cooked with sausage, smoked pork, ribs, pork tail; also on the broth remaining after cooking ham or white sausage. Żurek is one of the Easter dishes, eaten with sausage and boiled egg.
